Fresh Mango Salsa
1 1/2 pounds tomatoes, seeded and diced
1 green jalapeno, halved lengthwise, seeded and minced
1 large mango, peeled and diced
1/2 tablespoon olive oil
1/2 cup diced red onion
1/4 teaspoon finely minced garlic
1/2 teaspoon sugar
salt, to taste
2 tablespoons chopped fresh cilantro
Combine all ingredients and serve with chips. It tastes even better the second day.
